Join me as I get out and about in 2021.  I’ll be demonstrating fabulous recipes and bringing laughter back to the kitchen. Below is the program for the first half of the year.

 

MAY 1ST – THE ULTIMATE OLIVE AND OLIVE OIL CLASS WITH WEA

Rosa Matto invites you to a culinary experience. Discover the incredible flavours and health benefits of using local table olives and Extra Virgin Olive Oil in your everyday cooking. A lavish lunch will be demonstrated and served and you will go home with a comprehensive booklet of recipes and tips for using olives and their oil. Recipes will feature Pesce in Saor (fish in sweet and sour sauce), Ma'ahani (Lebanese lamb sausages), Patatas Bravas, Spanish Tortas de Aceite, Eggs and olive salad, Olive oil and chocolate mousse. You will also be shown simple cosmetic applications such as soothing lip balm and hand moisturiser. This class may just change your life!

MAY 11th  ROSA & FRIENDS - ISLANDS IN THE SUN – ADELAIDE FOOD FRINGE

This course will be held at Pirate Life Brewing-Pt Adelaide and will be run in conjunction with the Adelaide Food Fringe. Join Rosa and her Kitchen All Stars in a collaboration with Rose Senesi and Nat Perrotta as they celebrate the food, music and stories of the Islands of Italy. Visit Sardinia, Sicily and its islands Ischia, Procida, Elba, the Islands of the Venetian lagoon, Isole di Tremiti - the list is endless, and so is the distinctive culture and food from each location. Enjoy a menu of fish, lamb and rabbit, honey, grains, cheeses made fresh before your eyes, all interspersed with songs, stories and dances Tarantella and Pizzica from the Salento. Sit back with your welcome ale and be transported to the Islands of Italy. (Fee includes a welcome ale and all food and entertainment. Additional drinks will be available throughout the night at your own cost).

MAY 12 & 13TH  - NONNA TURNS UP THE HEAT – NONNA’S CUCINA

Join Rosa, Stefan Dimasi, Nancy Colarco and the famous Nonna Maria as they show you how to barbeque – Italian style. We will make and cook our own pork and fennel sausages, marinate some squid, quail, lamb and lots of vegetable dishes including caponata alla brace and cacciocavallo with almond pesto. The ‘long table’ dinner will finish with coffee, and Nancy’s famous tiramisu, fried custard and home made liquore.

It will be a fun night of food, wine, music and dancing. 

The class will be held at 6 pm sharp at Nonna’s Cincina headquarters in Royal Park.

JUNE 22nd   - AT HOME – THE MAGIC OF  PUGLIA 6.15 for a 6.30pm start – 9.30 pm.

Two of my favourite things: cooking and travelling through Italy come together in this intimate class in my own kitchen at Prospect.  To say I have fallen in love with Puglia and its food is an understatement. Rustic, flavourful, fiercely dependent on locale and season, the food of Puglia will bring sunshine and light into a dull winter. Numbers are capped at 10 diners. Dinner will be accompanied by wines and a special home made digestivo.

JULY 17TH  - ONE POT SCREAMERS - WEA

This class will make winter worthwhile. Prawns in rich tomato ragu, chicken with hearty wild mushrooms, casseroles, soups and, of course, a decadent dessert. Sponsored by Tomich Wines and SA Olives.
